• Wash your tea maker with warm water and set aside for later.
• Boil the water and keep it for the green tea.
• Gently bruise the mint leaves in a mortar and pestle – don’t break the leaves, just lightly pound them a few times to release the flavour.
• Combine the hot water, green tea, mint leaves and sugar and let it steep for a few minutes – the longer you leave it, the stronger will be the flavour.
• Serve in cups with fresh mint leaves as a garnish.
GINGER ICED GREEN TEA
This take on ginger tea is not only good for your throat but also is extremely tasty! The flavour of ginger is subtle and always a good way to add an extra kick to your regular cup of green tea.

• Place 2 cups water into a saucepan along with the ginger and bring to a boil.
• Reduce the heat and simmer for 5 minutes.
• Stir in the honey.
• Remove the pan from heat and incorporate the tea bags.
• Steep for a minimum of 3 minutes and then strain out the remnants of the ginger and tea bags.
• Combine the strained mixture with the remaining 3 cups water and chill.
• Serve over ice.
